Colsanto, owned by the Livon family, is located in Umbria– a new challenge for the Livon family now that they have mastered the art of winemaking in Friuli. The Umbria vineyards date back only to the 2001 harvest. Fermentation is temperature-controlled at a relatively low temperature and follows a period of a cold soak. This cutting edge technique produces wines that are full of the fruit of the traditional Sagrantino but without the bitterness and astringency of the tannins. Aging is done in barrique. Montefalco Rosso (Blend of Sagrantino, Sangiovese) A rich and concentrated wine, this blend highlights dark berry fruit flavors balanced by a full body and pronounced oak tones followed by a wide spectrum of flavors including spice, tobacco, licorice and earth. A great match with full flavored dishes, roasts and barbecued meats.
Ruris Rosso (Blend of Sangiovese, Merlot, Sagrantino)This single vineyard red is the product of meticulous harvesting totally carried out by hand. Vinification begins with fifteen days of temperature controlled fermentation, followed by ten months of malolactic fermentation and maturation in barriques (70%) and stainless steel tanks (30%) and finishes with a long period of bottle refinement. A fruity bouquet, ranging from spices to wild berries is coupled with soft tannins and a long finish. Perfect with aged cheese, ragout based pasta dishes, poultry and red meat.
Sagrantino di MontefalcoThis hand harvested red comes from a 3 hectare vineyard in Montarone. This powerful, full-bodied red is rich with concentrated flavors of dark berry fruit coupled with pronounced oak tones, derived from 15 month aging in barrique with 12 months in stainless steel, and followed by a pleasant, lingering finish. A great match with full flavored dishes, roasts and barbecued meats.
