Umbria Olive Oil (organic)

The olive oils from Umbria, Italy are typically from the trees of  Frantoio, Leccino and Moraiolo.  Frantoio is one of the most highly acclaimed oil varieties in the world and has a fruity, strong aftertaste; Leccino has a milder, sweeter flavor; Moraiolo has a grassy taste with bitter aftertones. Mix them together and you get a richly colored oil with a fruity, peppery taste.

Olives are ready when you can pull them off the stalk easily, the flesh gives a bit when you squeeze it and there’s an oily feel when you open them up. The olives are harvested by hand and no pesticides are used on the trees or in the groves. They are then transported to the mill for cold pressing in batches as soon as they are picked (the ‘quicker’ the olives are pressed after picking the better for flavor and quality); 5 to  6 kilos will make 1 liter of oil.
