Colsanto, owned by the Livon family, is located in Umbria– a new challenge for the Livon family now that they have mastered the art of winemaking in Friuli. The Umbria vineyards date back only to the 2001 harvest. Fermentation is temperature-controlled at a relatively low temperature and follows a period of a cold soak. This cutting edge technique produces wines that are full of the fruit of the traditional Sagrantino but without the bitterness and astringency of the tannins. Aging is done in barrique.
